About Marmelo

Marmelo is Ross & Sunny Lusted’s opulent take on Portugal and wood fired cooking, inspired by the small restaurants and bars of coastal Portugal and Spain where the markets, like Melbourne, are integral to the fabric of daily life.

Known for cooking with wood and charcoal, Ross has centred Marmelo’s open kitchen around a custom-built charcoal grill and wood oven.

Guests are welcomed to Marmelo’s vibrant and energetic dining room amidst an array of traditional hand painted tiles reminiscent of the street of Lisbon, a jewellery-box-like glass wine room and original artworks by Lucy Roleff and Ben Mazey.  Designed by Mitchell & Eades, Marmelo features intimate dining spaces, banquette seating covered in rich tapestry fabric, brushed metal details and a grand chartreuse staircase taking centre stage.
